Nutritional science is a broad field that draws upon biology, chemistry and social sciences. Students majoring in this field can research a variety of issues such as the influence of dietary patterns on the health of populations, the biological mechanisms through which nutrients effect metabolism, dietary patterns for people of different activity levels and medical conditions, and the roles of governments and businesses in providing accessible, healthy food supplies and in promoting healthy eating practices.

The core curriculum of the Nutritional Sciences Major includes courses in biology, organic chemistry, biochemistry, physiology and math as well as introductory courses in social sciences to provide students with a strong foundation. Students pursuing this major will be well-prepared for a number of different career paths, including careers related to medicine and other health issues, dietetics, fitness and wellness, nutrition communications, international nutrition and global health and research.
